Why the butterfly shape helps

A flat pillow makes a side sleeper's shoulder carry the geometry: it gets pressed into the mattress while the neck bends down toward it. The butterfly cutouts take the shoulder out of the equation, so the foam supports the neck at its own height instead of the shoulder's.
